In the English 1841 census Cubitt was living with his parents and his father's occupation was a baker. In the 1851 census Cubitt has become Journeyman baker (Apprentice).
Samuel, his father, had a thriving business and moved around the country purchasing, marketing and distributing crops up and down the coast of England which brought him into contact with trading ships and as a child Cubitt accompanied his father and so was introduced to the life at sea.
Cubitt began working on trading ships that went to the Baltic Sea, the Canary Islands and Cape Verden.
The ship 'Waterloo', on which he was working, came to Sydney arriving on the 13 December 1854, the captain was James Green. Cubitt deserted his ship in Sydney and went to Bendigo, Hill End, and Bathurst searching for gold without success.
He returned to Sydney and began working at the flour mills at Millers Point and at some point, he has a business in Sydney.
Cubitt married Mary Ann Szarka in 1859 at Glebe N.S.W
According to the Sands Directory 1863, Cubitt was in Sydney at 11 Athlone St. and was a baker. In June of that year he was declared insolvent.
We don't have records for when he returned to the sea. He sailed on vessels between Sydney and Melbourne then worked at a flour mill in Campbelltown where three of his seven children were registered.
Samuel, his son, was registered in Sydney in 1860 as was Mary Ann born in 1859. Rachel was registered in 1865 in Campbelltown as were the following two children Hannah 1866 and Emily 1868. Ellen Francis Leek was registered in 1869 at Kiama and Jemima in 1870.
Cubitt began a bakery business on Manning Street Kiama, but his son tragically drowned in 1871 so the family moved back to Sydney.
In 1873, the family came to Shellharbour where he returned to baking again. He leased 8 Addison St. from Robert Wilson later purchasing 12 Acres and 12 perches in Eastern Ave and built Beau Vista and lot 9 of the acreage held " The Keep" (a place to store food)
In 1882, he started a bacon curing business.
Cubitt (known as George) donated 5 shilling to a hospital fund and in 1889 the bakery in Addison Street was to be sold or to be let.
Mary Ann, his wife died in 1909.
On retirement George moved to live with his daughters at 'Aronda' in Shellharbour, and in 1926 he died aged 92 years.
